Takachiyo is a sake brand produced by Takachiyo Sake Brewery in Minamiuonuma City, Niigata Prefecture. Takachiyo Sake Brewery is a historic brewery founded in 1868, and brews sake using meltwater from Mt. Makihata, one of the 100 most famous mountains in Japan, and high-quality sake rice that is polished in-house.

What is Takachiyo Junmai Daiginjyo "Ipponjime"?
This is a freshly pressed Junmai Daiginjoshu made using Takachiyo Sake Brewery's specialty sake rice, "Ipponjime."
All of the "ipponjime" rice used is from Minami-Uonuma, the brewery's local area, and is polished using our own rice polishing machine. You can enjoy the delicious sake that was born from our commitment in a fresh, freshly pressed state.

Brewed with Hiroshima Ginjo yeast, this full-bodied sake has a gorgeous, ippon-shime-like quality. It expresses the youthful, vibrant aroma of new sake and the rich flavor of unpasteurized sake with a delicate touch.
The recommended way to drink it is chilled.

The Kurosawa brand sake brewery is "Kurosawa Sake Brewery Co., Ltd." (official website: https://kurosawa.biz Instagram: https://www.instagram.com/9630sake/), located in Sakuho-machi Minamisaku-gun, Nagano Prefecture.
Located at the top of the Chikuma River in the foothills of the Northern Yatsugatake Mountains, the brewery takes advantage of the nature and water nurtured by one of the most prominent plateaus in the country, 800m above sea level, to produce flavorful sake.
The water used in brewing is underground water from the Chikuma River, and the raw rice is "Miyama Nishiki" from Nagano Prefecture and "Hitogokochi" from Minamisaku, and the brewery is committed to using local produce and even polishes the rice in-house.
Kurosawa Sake Brewery is particular about its traditional "Kimoto-zukuri" method, which is a labor-intensive method that takes twice as long as usual to cultivate yeast. This traditional method produces robust sake with a deep, rich flavor that has earned it high praise overseas.
In addition to its own brand of sake, "Kurosawa," the company also produces brands such as "Izutsucho" and "Maruto."
