What is Tatenokawa Junmai Daiginjoshu "Komyo"?

This Junmai Daiginjoshu achieves a rice polishing ratio of 1%, something that no other brewery had been able to achieve at the time of its release in the history of Japanese sake. It is the finest Junmai Daiginjoshu, made by polishing Yamadanishiki rice, which is soft and difficult to polish, to a diameter of 1mm over a period of about two and a half months.

Even when aged in the refrigerator, the sake will easily maintain its quality for three to five years, and the flavor will become mellower as it ages, so you can enjoy the taste changing over time.
