Characteristics of the brewery
The Matsunokotobuki brand sake brewery is Matsui Sake Brewery Co., Ltd. (official website: https://www.matsunokotobuki.jp/ ), located in Shioya County, Tochigi Prefecture.
The founder of the brewery founded the brewery in Tochigi in 1865 after searching for water from Niigata, and today the fifth-generation head brewer, Matsui Nobutaka, brews sake with great care.
Matsunokotobuki sake uses spring water from the mountain behind the brewery as the brewing water. This water is rare and extremely soft, and its fermentation power is weak, so delicate brewing techniques are required. Sake made with this water ferments slowly, resulting in a wonderful taste that retains its freshness for a long time.
Matsunokotobuki sake has won numerous awards at sake competitions both in Japan and abroad, including the National New Sake Tasting Competition, IWC, and Kuramaster. The company is currently actively exporting its sake overseas, including to the United States.
