What is Hohai Junmai Daiginjo "Tsurushi Zake"?

This is said to be the best of the best Daiginjo sakes. It is a luxurious sake made in a sake brewery in the bitter cold, by suspending the most delicious middle part of the best Junmai Daiginjo in a sake bag and collecting the dripping drops.

The raw rice, "Yamada Nishiki" from Hyogo Prefecture, is polished in-house to less than 40%. The sake is pressed in the spring and then aged at low temperatures in bottles to bring out its flavor and umami before being released from the cellar, making it a limited edition sake with quantities that vary from year to year.

 Ingredients Yamada Nishiki
polishing ratio 39%
Alcohol content 16%
