What is the Daina Tokubetsu Junmaishu "Hiyaoroshi" ?

This Tokubetsu Junmaishu, which Daina is proud of, is made using the locally grown sake rice "Nasu Gohyakumangoku," and is a limited edition "Hiyaoroshi" version that will be released in the fall.

"Hiyaoroshi" is sake that is pressed in the winter, pasteurized in the early spring, stored, and aged in the fall before being shipped. You can enjoy the mild, calm aroma and rich flavor that are characteristic of "Hiyaoroshi."

Characteristics of the taste of Daina Tokubetsu Junmaishu "Hiyaoroshi" (sweetness, sourness, depth of flavor, aroma, suitable temperature)

It has a gentle fruity aroma reminiscent of pears. When you put it in your mouth, a mellow flavor spreads, and it changes into a deep flavor that is gentle yet well-structured.

It's delicious chilled, but the rice flavor really stands out when served at a slightly higher temperature, between room temperature and warm sake.

Characteristics of the brewery

The Daina brand sake brewery is Kikunosato Sake Brewery Co., Ltd. (official website: https://kikunosato-sake.com/ Instagram: kikunosato_shuzo) located in Otawara City, Tochigi Prefecture. The brewery has been in operation since the end of the Edo period, and the current eighth-generation head brewer, Mr. Makoto Akutsu, is in charge of sake brewing as the chief brewer.

Nasunohara, which includes Otawara City, is a land rich in nature, blessed with high-quality water and sake rice. The brewery aims to make "fun sake, sake that makes you happy" in this area. They are particular about local sake, and about 95% of the rice they use is grown by local contract farmers with reduced use of pesticides.

Based on the principle that "sake brewing starts with rice cultivation," we are proud of the history and tradition of our brewery and are constantly challenging ourselves with new things.
