What is the Daina Cho-Karakuchi Junmaishu ?

This is Daina's standard Junmaishu. It is currently exported to 10 countries and is listed on the menus of top restaurants in New York, Paris, Hong Kong, and other cities.

This is Daina's driest sake. It has a sake meter value of +10, but is smooth to drink and has a full-bodied flavor. It is also highly regarded overseas.

Characteristics of the taste of Cho-Karakuchi Junmaishu  (sweetness, sourness, depth of flavor, aroma, suitable temperature)

It has a slight Muscat aroma. It is a very dry type, but it is not just dry. It is smooth on the palate and has a full-bodied flavor that allows you to taste the umami of the rice.

It is best served slightly chilled or at room temperature.

Characteristics of the brewery

The Daina brand sake brewery is Kikunosato Sake Brewery Co., Ltd. (official website: https://kikunosato-sake.com/ Instagram: kikunosato_shuzo) located in Otawara City, Tochigi Prefecture. The brewery has been in operation since the end of the Edo period, and the current eighth-generation head brewer, Mr. Makoto Akutsu, is in charge of sake brewing as the chief brewer.

Nasunohara, which includes Otawara City, is a land rich in nature, blessed with high-quality water and sake rice. The brewery aims to make "fun sake, sake that makes you happy" in this area. They are particular about local sake, and about 95% of the rice they use is grown by local contract farmers with reduced use of pesticides.

Based on the principle that "sake brewing starts with rice cultivation," we are proud of the history and tradition of our brewery and are constantly challenging ourselves with new things.

"It says it's very dry, but it's easy to drink and has a clean aftertaste. You can taste the rice and it has a little sweetness and sourness. It goes well with any snack, whether light or oily.
